As someone who has never read any GL comics and would like to really get into the character, which ones would you recommend?

GL is tough, as there's never really been a "definitive" GL take.
However, if you start with Green Lantern: Rebirth by Geoff Johns, and then just start buying all the subsequent trades, you'll get up to speed on the character pretty quick.
The problem is, the early stuff in that run is VERY continuity heavy, so you may feel a little lost if you're completely unfamiliar with the character. However, after a trade or two, you'll be settled in pretty well.
The best thing is, if you do this chronologically, you'll get to The Sinestro Corps War which is, unequivocally, the greatest Green Lantern story ever told. It's the story arc where the mythology of the Green Lantern Corps finally reaches it's potential. It's like Star Wars...if Star Wars didn't start to suck.

Emerald Dawn I and II.
Start there for Hal stuff. Also, give Dennis O'Neal's Green Lantern/Green Arrow stuff a shot.
For Kyle Rayner stuff, I like Judd Wynick's run on the book. Also, some of Ron Marz run. The book where Kyle runs into Hal in the past is pretty good. Think it's called "Emerald Knights". Could be wrong tho. Try those as well.

I loved Emerald Dawn 1 & 2, but they're no longer in print in trades, and I think they've retonned 'em out!!!!

Yeah, my buddy had me read all those Hal ones, where he's...y'know...I don't wanna spoil it, and when Rayner starts and that got me to read all of the newest run of GL beginning with #1 and read all the GL Corps that corresponded with any storylines.
The Sinestro Corps War was one of the most fun fucking things I've read in a long time. Blackest Night, I feel, could outdo it. I haven't read anything lately but that's about to change. I can't wait to start reading those.
At this point, I'm not sure which character I like more, The Flash or GL. Might be tied. And I love me some Flash.

Absolutely worth a read, but despite it being an "Origin" shoudln't be the first thing of Johns' run that you read. Strange, I know....
And it retcons all of Emerald Dawn, so, beware if you've read that first.

Gets better. Book builds to a pretty serious crescendo from Rebirth up through Sinestro Corps War. It's still really good after that, but in my opinion, never tops it.
